Recipe: French Onion Soup

2 T. butter

1 T. olive oil

1 ¼ lbs. onions, thinly sliced

1 tsp. sugar

2 cloves garlic, crushed, plus 1 clove garlic, halved

5 c. beef or chicken broth

½ tsp. salt

½ tsp. black pepper

8 slices French bread

¾ c. grated cheddar cheese

Heat the butter and oil in a large saucepan.  Add the onions and cook, stirring occasionally, until softened, about 10 minutes.  Add the sugar and crushed garlic to the pot, increase heat slightly and cook until the onions are dark brown, 10 to 15 minutes.  Pour in the beef broth.  Add the salt and pepper.  Simmer over low heat for 30 minutes.  Preheat broiler.  After the soup has been simmering for 20 minutes, rub the bread slices with the garlic halves.  Toast the slices on both sides under the broiler.  Ladle the soup into 4 ovenproof bowls.  Top each bowl with 2 toasts.  Sprinkle with the cheddar.  Place bowls under the broiler and broil until the cheese is bubbling, 2 to 3 minutes.  Serve immediately.  Prep time: 15 minutes; cook time: 50 to 60 minutes.  Serves 4.
